Recipe Warm sandwich with yesterday’s roast

An alternative way to use up the leftovers: A warm sandwich is a perfect snack when out on the hunt or even as a meal in the evening. The GECO version blends a juicy roast with spicy chilli mayonnaise, crispy onion rings, bitter-sweet orange and delicately aromatic spinach.

INGREDIENTS

Ingredients for 4 people:

  • 2 baguettes
  • Slices from yesterday’s roast
  • 2 handfuls spinach leaves
  • 1 orange
  • 200 g aromatic cheese
  • Salt, pepper

Onion rings

  • 4 red onions
  • Flour
  • Salt
  • Oil

Chilli mayonnaise

  • 2 eggs
  • ½ lemon
  • 1 tsp. mustard, medium hot
  • 1 pinch pepper
  • 1 tsp. honey
  • 1 tsp. paprika powder 
  • ½ tsp. chilli powder (more if you like)
  • ¼ tsp. salt
  • 250 g vegetable oil

Instructions

Onion rings

Thinly slice the onions. Heat the oil in a pan. Meanwhile, place the flour, salt and onion rings in a freezer bag, seal and shake until all the rings are coated with flour. Then add small portions of the rings to the pan and fry in the hot oil. Leave to drip on a paper towel.

Chilli mayonnaise

Separate the egg white from the yolk (use the egg white elsewhere). Halve the lemon and squeeze the juice. Add the egg yolk, spices, honey and mustard to a bowl and mix. Add drops of oil to the bowl, mixing all the time with a hand-held blender with whisk attachment. Then pour the oil in a thin stream once the mayonnaise starts to become firmer. Season the chilli mayonnaise with lemon juice and salt.

Sandwich bread

Pre-heat the oven to 200 degrees Celsius (top and bottom heat). Slice open the baguettes and drape the top part with cheese. Sprinkle each side with a pinch of salt and pepper. Bake both halves in the oven until they are toasted to your preference and the cheese is slightly melted (5–10 min.).

Wash the spinach leaves and fillet the orange in the meantime. Slice the roast.

Spread the toasted baguette bases with lashings of home-made sandwich chilli mayonnaise and top with spinach leaves, slices of roast, orange fillets and onion rings.

Fold the top and the bottom together and tuck in!
