These meatballs made from fine wild boar mince impress with their intense flavours, melted mozzarella and fruity peppers.
INGREDIENTS
- 500 g minced wild boar
- 2 slices of toast bread
- 100 ml milk
- 1 egg
- 1 onion
- 1 clove of garlic
- 1 tsp mustard
- 1 tsp paprika powder (sweet)
- 100 g mozzarella (cut into small cubes)
- 1 red pepper
- 2 tbsp fresh parsley (chopped)
- Salt, pepper
- Oil for frying or for the baking tin

Prepare the mixture
Soak the toast in milk and squeeze out the excess. Finely chop the onion and garlic, and dice the pepper into very small cubes. Mix everything thoroughly with the wild boar mince, egg, mustard, spices, parsley, bread mixture and mozzarella. Knead the mixture vigorously and leave to rest for 10 minutes.

Shape into balls and cook
With moistened hands, shape into small balls (approx. golf ball size). Place on a baking tray lined with baking paper or in a lightly oiled dish. Cook in a preheated oven at 180°C (top/bottom heat) for approx. 25–30 minutes. Alternatively: Fry in a cast-iron pan with a little oil until golden brown all over.

These meatballs are perfect for the barbecue – simply place them in a grill pan or on a perforated grill plate. If you like, you can add a little chilli or smoked paprika powder for extra spice. They are also delicious as a filling for pita bread or on a salad!
